Toasted Coconut Topped Cream Cheese Banana-Nut Bread
BREAD INGREDIENTS:
3/4 cup butter, softened
1 (8oz.) cream cheese, softened
2 cups sugar 2 large eggs
3 cups all purpose flour 1/2 teaspoon baking soda
1/2 teaspoon baking powder 1/2 teaspoon salt
5 medium ripe bananas, mashed
1 cup chopped pecans 1 teaspoon vanilla
Beat butter & cream cheese at medium speed until creamy. Gradually add in sugar, beating until blended. Add eggs, one at a time just until blended.
Combine flour and next 3 ingredients and sift together. Add to butter mixture until well blended. Stir in bananas, pecans & vanilla.
Spoon into loaf pans that have been coated with cake release. If you haven't used Wilton's Cake release and you bake you are missing out! It is the best!! It's in the wedding section at Wal-Mart.
Bake at 350* for 1 hour or until toothpick comes out clean. If it starts to brown to fast cover with foil. The last 5 minutes make topping.
TOPPING INGREDIENTS:
Bring 1/4 cup each of butter, granulated sugar, brown sugar and milk to a boil in a small saucepan on medium heat. Stir constantly! Remove from heat and stir in 1 cup chopped pecans and 1 cup flaked sweetened coconut and 2 teaspoons vanilla. Spread on warm loaves. Broil 5 1/2 inches from heat for 3 minutes or until nicely browned and toasted. Cool in pans 20 minutes....than another 30 on a wire rack.
Oh YUM!

I don't like bananas but that sounds freakin' awesome. Maybe Heather will see this and make some for Christmas (wink-wink Heather). I don't think I could get passed mashing the bananas but I could eat this. YUM
Can you say SINFUL??? Oh, I'd have to run on the treadmill for hours to burn that calorie overload off! I love coconut AND banana bread, so this would be a huge hit in my book!!! I'm definitely going to have to give it a try! Have a good one, Betty!

Betty, you know I love ya, but SHUT UP!!!! This sounds and looks too incredible!!!!!! And here I am trying to lose the 3 lbs. I gained over Thanksgiving! (OK, maybe not lose, but hopefully not gain any more BEFORE Christmas!!! Who am I kidding???)
