Pineapple Pepper Burgers

My hubs loves to cook-last month I bought him a cookbook that has loads of grilling, barbecue and summer salad recipes in it.

Last week he was thumbing through it and decided Wednesday night we would try one of the burger recipes.

Pineapple Pepper Burgers

The taste of sweet red peppers and honeyed pineapple rings sets this burger apart. It was so good I wanted to share the recipe with you all.

3/4 cup fresh bread crumbs
3/4 cup chopped red pepper
1/3 cup ketchup
1/4 cup finely chopped onion
2 tbsp. chopped fresh cilantro
1 large egg
1 1/2 tsp. salt
1/4 tsp. pepper
1 1/2 pounds ground beef
6 pineapple slices
2 tbsp. soy sauce
1 tbsp. liquid honey
6 Kaiser buns, split
6 Leaf lettuce leaves

Combine first 9 ingredients in a large bowl.
Add beef. Mix well. Divide and shape into 6 patties. Preheat grill. Cook patties on a greased grill for about 6 minutes per side until no longer pink inside.

Combine soy sauce and honey in a small dish. Brush sauce on both sides of pineapple slice. Cook pineapple slice on grill for 2-3 minutes per side until grill marks appear.

Toast buns on grill till light brown.

Build your burger and enjoy!!!

I love pineapple but not cooked pineapple.

But I'd definitely make the recipe without the pineapple part! It sounds much better then throwing a patty of beef on the grill. I like "stuff" with my burger. It's hard when you have a husband and kids that won't eat any of that stuff though.

YUMMM that sounds SOOO good! And with so much fresh pineapple at the tips of my fingers, I think I will have to try this out and see what my Brazilian family thinks!! :)

12 year vegitarian here. But, I could totally see this working with a soyburger substitute.

That burger sounds divine. I love grilled pineapple, I'll have to give this a try, but maybe substitute ground turkey since I don't do beef. Thanks for sharing.

Hiya Betty - that sounds so yummy. Love the thought of the pineapple on the burger.

I've been so busy lately but I think I'm finally back and wanted to pop in and say HI!
